Q: What gives Kobe Beef its flavor?
A: Fat is where most meat gets much of its flavor. Japanese Kobe beef comes from the Wagyu cattle breed. The Wagyu cattle are fed large amounts of beer and are massaged with Sake, the Japanese rice wine. The high proportion of well-marbled fat in these cattle not only adds flavor, it also makes the beef extremely tender. Kobe-style beef is now being raised in the U.S., though that doesn't make it any more affordable.
